We’re joining the #30daysInspiralized Instagram contest from Ali Maffucci over at www.inspiralized.com ! I bought a Paderno Tri-Blade Spiral Vegetable Slicer for myself after visiting her awesome website and falling in love with turning veggies into NOODLES ! SO FUN! I might have already shared my new passion upon chatting with you about trying to cut carbs, increase veggies etc. I’ve had some ‘fall off the wagon’ moments but overall I seem to be maintaining some weight loss. The recipes are AMAZINGLY good and frankly, I don’t miss pasta at all, nor the calories. She has a new cookbook out – which I’d love to win….. but I’ll probably buy it eventually anyway. Plus, she tweaked the spiralizer design and is selling her own version which is supposed to be even better.
So here we go on the 30 day mission!! I’ll post links etc. if the recipes are not my own. Hope you join me!
DAY 1 – Cacio E Pepe * with extra bacon and added mushrooms
DAY 2 – Gluten Free Chocolate Chip Zucchini Noodle Muffins
DAY 3 – Miso Mustard Chicken & Rice Soup with ginger, garlic and zucchini noodles *my hubby’s creation with slow cooker roasted chicken broth – Miso Mustard sauce from the Asian Food Market
DAY 4 – Veggie Wrap with Humus, Zucchini & Carrot Noodles, Avocado, Green onions and Feta
DAY 5 – Greek Salad with lettuce and Cucumber Noodles (loosely based off Greek Pasta Salad but no chickpeas or spinach…)
DAY 6 – Zucchini Rice with Cranberries, Bacon, Caramelized Pecans, Mozzarella with a Maple Dijon Dressing loosely based on this recipe at www.inspiralized.com
DAY 7 – Zucchini Ribbons with Organic Ground Beef and Tomato Marinara Sauce
DAY 8 – Teriyaki Salmon on Ribbon cut zucchini and carrots with mushrooms and spiralized onions
DAY 9 – Salad with ribbon cut apples and leftover salmon, ribbon cut zucchini, carrots and onions, chow mein noodles with a miso dressing.
DAY 10 – Spiralized sweet potato nests with fried egg
DAY 11 – Cinnamon apple noodle crumble with ice cream (this was ridiculously good…. !! Will post recipe later)
DAY 12 – Nori Roll with Salmon Salad, avocado and spiralized apples
DAY 13 – Egg muffins with red peppers and spiralized onion and roasted sweet potato noodles
DAY 14 – Portugese BBQ Chicken with Garlic Chili Zucchini noodles and Black Rice
DAY 15 – Homemade BBQ Black Bean Burgers with cheese in a tortilla topped with onion, spiralized cucumber ribbons
DAY 16 – Pesto Zucchini Noodles with a hint of sundried tomato
DAY 17 – Cucumber Ribbon Sesame Salad
DAY 18 – Vegan Buffalo Cauliflower with Sweet Potato Noodles
DAY 19 – Battered Fish with Spiralized Sweet Potatoes and leftover Buffalo Cauliflower
DAY 20 – California Rolls (Nori with crab, avocado, spiralized cucumber and carrot ‘C’ ribbons
DAY 21 – Kale caesar salad with spiralized sweet potato noodles and spicy roasted chickpeas
DAY 22 – Southwest skillet with sweet potato “rice” and corn, black beans, tomato
DAY 23 – Cinnamon sugar rice cakes with almond butter and ribbons of apples on top
DAY 24 – English Muffin with brown sugar cream cheese, topped with spiralized apples then sprinkled with cinnamon sugar
DAY 25 – Spiralized cucumber and carrot salad with wok stir fried chicken and peanut sesame sauce
DAY 26 – Vanilla yogurt parfait with spiralized asian apple pears and strawberries
DAY 27 – Mixed baby greens salad with spiralized asian apple pears, candied pecans, feta cheese and red onions. Dressing: White Balsamic Vinegar with avocado oil, mustard and garlic.
DAY 28 – Broccoli Slaw Salad but made with Rainbow carrots and Broccoli stems spiralized – along with Broccoli florets, pepitas, cubes of Dubliner cheese – Mayo/Mustard/Mandarin Orange dressing
DAY 29 – Quattro Signature “Spaghetti” (Zucchini noodles instead of Spaghetti – Sauce made with ground chicken, black beans, tomato, garlic and chili peppers)
DAY 30 – Bacon & Brussels Sprouts Potato Noodle Casserole or Gluten-Free Spiralized Pizza
